Founder’s Reserve (2015)

Born out of our maiden harvest of 2015, – and rated “Outstanding” by Decanter wine magazine in 2020. Classic trio of sparkling wine grapes ripened on a south-facing chalky slope below 100metres altitude, then matured in-bottle for seven years on the lees (yeast).  Enriched with a hint of oak barrel ageing.  Smooth, sophisticated, sublime!

  • Squid with shiso (Japanese basil) leaf
  • Scallop with yuzu
  • Seared salmon with Yama wasabi (Japanese horseradish)

Blanc de Blanc (2017)

“This is packed full of fresh fruit. Lashings of citrus, primarily grapefruit and lime with a hint of confit lemon. A delicate floral honeysuckle and peach blossom character as well as a subtle brioche note from extended lees ageing. This wine lingers on the palate and is dangerously moreish.” – Alex Stevenson, The Drink School

  • Sweet prawns
  • Sea bream
  • Seared scallops
  • Tobiko (flying fish roe)

Blanc de Noirs (2018)

‘Blanc de Noirs’ refers to wine made from black skinned grapes. This sparkling wine is made from Pinot Noir and Pinot Meunier grapes, carefully pressed to extract a pale golden juice. Delegates who attended the recent Pinot Noir Symposium in Oxford were unanimous in their praise for Fairmile’s Blanc de Noirs.

  • Hamachi (yellowtail) with shiso paste
  • Tuna
