As Pancake Day or Shrove Tuesday rolls around again (16th February) we thought we’d ask a few locals who know a thing or two about food and how they like to eat theirs and with a few top tips thrown in. Plus where you can get your pancake fix if you don’t fancy having a go at tossing one yourself!
So this is my favourite way, lemon curd, raspberry and meringue on top of a buttermilk pancake. I like trying to incorporate another dessert into a pancake. So it’s a lemon meringue pie pancake!
My tops tips would be make your batter the night before and leave it rest overnight. It will help activate all the baking agents and I use local Henley honey as a replacement for sugar in my pancakes. Much better flavour.
I love any type of gratin, baked, cheesy, tomato, meatball loveliness. And pancakes make the perfect vessel to stuff full of balls, cream cheese and flavour, so here’s my Meatball Pancake Bake recipe.

My daughter Evie’s favourite is a sweet pancake rolled with warmed Nutella and then filled with coffee cream and raspberries.
I have more of a savory tooth and love a pancake filled smoked salmon and topped with creme fraiche and Exmoor Caviar.

I love a traditional sugar & lemon pancake and made them for donkeys year for the children, now it’s just me and my partner he’s in charge of Pancake Day. He has far more of a savoury rather than sweet tooth so we get bacon or pancetta and cheese pancakes.
Cook the bacon or pancetta, pop it on top of the pancake, smother with cheese of your choice and under the grill until melty & gooey. Yum!
