Get ready to get your taste buds tingling as you explore the heart and soul of West African cuisine at Pavilion Foods new supper club and cookery class with Niyi from Novice Kitchen. This is your chance to dive into the rich flavours and vibrant dishes that showcase West African culinary traditions.
“Niyi grew up in Nigeria where spice and intense flavours were an intricate part of his childhood. After relocating to England, he found himself quite the novice in the kitchen, unable to match the level of flavour or spice his palate was used to. Years later, while travelling, Niyi worked with a chef who educated him on exploring unique new ways to fuse flavours from his multi-cultural upbringing together, thus the plan for Novice Kitchen was cooked up”.

- Jollof Rice Arancini Balls on a bed of Nigerian Stew
- Guinness Braised Short Ribs with Plantain Mash or Red Wine Braised Smoked Aubergine & Mushrooms with Plantain Mash
- South African Malva Pudding with Vanilla Ice Cream & Supermalt Caramel or South African Vegan Malva Pudding with Vegan Vanilla Ice Cream
On Saturday 24th May join Niyi at Pavilion Foods for a hands-on cookery class where you’ll learn to master two iconic West African dishes — Nigerian Jollof Rice and Senegalese Yassa Au Poulet.
In this interactive session, you’ll be guided by through the step-by-step process of making these delicious, aromatic dishes from scratch. You’ll start by preparing the flavorful Nigerian Jollof Rice, known for its rich, savory taste and beautiful red hue. Then, you’ll create the tangy and spicy Senegalese Yassa Au Poulet, a succulent chicken dish marinated in mustard, onions, and lemon.
Whether you’re new to cooking or simply want to broaden your culinary repertoire, this class is designed to make you feel confident in the kitchen while exploring the heart and soul of West African cuisine.
