Meatball Pancake Bake

Equipment

Ingredients
  

For the pancake

  • 250 ml milk
  • 2 eggs
  • 130 g plain flour
  • 2 big pinches salt
  • 15 ml vegetable oil

For the balls - Make your own meatballs or make some 'cheatballs'

  • 4-6 free range pork sausages

For the filling

  • 75 g spinach
  • 30 g pesto
  • 115 g ricotta cheese
  • Pinch of nutmeg
  • Pinch of black pepper
  • 120 g grated cheese for topping

Instructions
 

  • Heat oven to 200°C or 180°C fan

Make pancakes & balls

  • Pancakes - Blitz all ingredients. Make 8 14-16cm diameter pancakes. Set aside. Can do this in advance or use anyleftover ones from pancake day!
  • Cheatballs - Remove the skin and roll into 32 - 40 small 20g balls. Can do this with a little water on your hands to avoid sticking. Brown with a splash of oil in a frying pan for 5mins. Remove to cool.

Build the pancakes

  • Wash spinach. Put into hot saucepan to wilt it. Drain and squeeze it between 2 plates to drain off any excess water. Chop finely. Stir all the ingredients together
  • Build the pancakes. Put a heaped table spoon of ricotta filling in a line in the middle of each pancake. Place 4/5 meatballs on the filling. Fold left and right ends in and roll over burrito style so they are sealed parcels. 

Tomato Sauce

  • You will need approx 500g of this. Either make a basic tomato sauce by cooking off some garlic in a little oil, adding passata /chopped tomatoes and cooking for 15min, then season with salt and pepper OR make some of the Bowlers Spiced Tomato sauce OR just grab a nice jar of some thing tomatotastic.

Finish the dish

  • Put the sauce at the bottom of a baking dish. Line up the pancakes on top of the sauce. Cover with cheese. Bake for 25mins or until the cheese is golden brownand the sauce is bubbling.
  • Cover with cheese.

  • Serve with a green salad, crusty garlic bread or demolish it as is!
